Gnocchi with Sausage & Spinach


I've made home made gnocchi and it's great, but you can buy shelf-stable gnocchi and keep it on hand in the pantry for a quick meal any time.  You can boil it, but in this recipe from Eating Well magazine, you fry it until tender instead of boiling to make a quick, easy meal. 


Here's what you need for this tasty, easy dinner.  

2 tablespoons olive oil
1 large onion
2 hot Italian turkey sausages
300g baby spinach
500g gnocchi
6 thin slices fresh mozzarella


Heat 1 tablespoon of oil in a large cast iron pan or other oven-safe pan.  Thinly slice the onion and cook over low heat for about 10 minutes until soft and brown.


Remove the sausage meat from the casings and crumble with the cooked onion.  Cook for about 5 minutes until sausage is browned and cooked through.  Mince the garlic cloves and add them to the sausage mixture.  Add 2 tablespoons of water to the pan and scrape the browned bits from the bottom of the pan.  This will make the turkey sausage turn a rich brown colour.


In a separate non-stick pan, heat a tablespoon of oil and add the gnocchi.  Cook for about 5 minutes over medium heat until soft and slightly toasty.


Add a handful of spinach to the pan.  


Stir it into the sausage mixture until wilted, then add more spinach until it is all wilted with the sausage.  Mix in the gnocchi.  


Preheat the broiler.  Place the mozzarella slices over the gnocchi & sausage mixture. 


Broil for 3 or 4 minutes until the cheese is browned and melted.


The melted cheese makes the dish rich and creamy.  Yum!
