Happy Hour: Watermelon Agua Fresca Spiked with Vodka

Agua fresca is spanish for "fresh water".  It's usually a combination of fruit, sugar and water blended together to make a refreshing summertime beverage.

This version has watermelon, sugar and lime juice blended with vodka to make a tasty summer cocktail.

For this tasty treat, peel and dice half a small, seedless watermelon.  You should have about 4 cup of fruit.

Place the watermelon in a blender.  Add about 1/4 cup of water and a tablespoon of sugar.

Purée the mixture in a blender, then add the lime juice.

Strain the juice in a fine mesh strainer.

Press it through and discarding any solids.  Refrigerate the liquid.

To make a cocktail, pour a shot of vodka over ice in a tall glass.

Add the watermelon agua fresca to fill the glass about 3/4 full.

Top the drink with club soda or sparkling water and garnish with a lime slice.

The refreshing taste of watermelon in a cocktail.  You can't beat that on a hot day.  Cheers!
