Banana Bread


Banana bread is such a nice treat.  It almost makes you look forward to overripe bananas.   It's a great breakfast or morning snack, and it freezes really well if you can't eat it all.   



Here's what you need:  


1 1/2 cups flour
1 1/2 teaspoons baking powder
1/2 teaspoon salt
1/2 teaspoon cinnamon
1/4 teaspoon nutmeg
2/3 cup sugar

6 tablespoons (3/4 stick) butter, softened
3/4 teaspoon lemon zest
1 large egg
3 ripe bananas



Preheat the oven to 350 degrees.  Mix together the flour, baking powder and salt.  Add the cinnamon and nutmeg and mix those in.  


In a separate bowl, mix together the sugar, butter and lemon zest.  I had to use lime zest because I was out of lemons.  No biggie.  


Beat the butter and sugar together until creamy.


Peel the bananas...


...and mash them up.  Add the egg and mix it all together with the sugar and butter mixture.  


Mix cinnamon and nutmeg in with the flour mixture.


Add the dry ingredients to the banana mixture in 3 additions until smooth.  


You can add 1/2 a cup of walnuts if you like nuts.  


Spread the batter into a greased loaf pan.  


Bake for one hour until browned and a toothpick inserted in the centre comes out clean.


Cool the bread before slicing.  


You can serve this with butter or without.  Quick, easy and delicious.  Enjoy!
