Water Buffalo Burgers


The other day the sun was shining and we went for a little drive.  We passed by the Arva Flour Mill outside London and noticed a sign advertising local and organic meats available, so we turned around and headed in.  We bought grass fed beef short ribs, organic pork chops and water buffalo, ground and sausages.  

We've had bison several times but we've never tried water buffalo. It comes from a farm in Stratford called Tenderbuff and it's supposed to be leaner than bison and even leaner than chicken!  




I picked up some potato rolls and a sweet onion to compliment the water buffalo.



We wanted the taste of the meat to shine through so we seasoned it very simply with just a little salt and pepper.  



I shaped it into patties and  pressed a little thumbprint in the centre of each so they'd remain flat.  



Although it's cold out we decided to grill the burgers.



Since it's so lean, the water buffalo is best cooked no more than medium.



While the burgers were grilling I sautéed some onions to top them.  I also whipped up a wedge salad with bacon and blue cheese dressing.  Just slice a head of iceberg lettuce into wedges.  I added some cucumber too.


I also sautéed some sliced sweet onion for the burgers and added a little bacon to that too.  


Then I added some cheese as well.  This is just some old cheddar and monterey jack but you could use any cheese you like.


You can have it relatively unadorned like this...


or add some ketchup, mustard, lettuce, etc.  The water buffalo tastes like beef but somehow cleaner and slightly sweeter.  It's delicious, healthy and we'll definitely have it again.
